Not yet been developed an ideal feed for sturgeon. Farmer in our country used trout feed for feeding of sturgeon. It is thought that they need linoleic (18:2 n-6) and á-linolenic (18:3 n-3) fatty acids in their diet. However, it is recommended that the feed is also rich in EPA and DHA in order to find n-3 series (EPA and DHA) in their meat and caviar. With examining the recent studies on fatty acids the requirements of the sturgeon and the fatty oil resources is to present a coherent way. Keywords : Fatty acid, feed, Linolenic, HUFA, Sturgeon
